Mediterranean Feta Salad

2 cups cubed tomatoes

1 ½ cups cubed cucumber

1 cup black and / or green olives (optional)

1 ½ cups chopped or crumbled feta cheese

3 T. of Italian Herb Extra-Virgin Olive Oil

1 T. of Italian Herb Seasoning

1 T. Crab Island Seasonings

Combine tomatoes, cucumbers, feta cheese, and 1 T. of olive oil and Crab Island Seasoning in mixing bowl. Mix well and chill for 1 hour. Remove, drain off water. Add 2nd tablespoon of oil, mix again. Arrange plates, each with a piece of crisp romaine lettuce. Top each plate with an ice-cream scoop size of the tomato, cucumber, cheese mixture. Serve, with pita chips or bread if desired. Add additional dressing if desired. Feeds 4-6 people.
