Seafood Recipes
Pan Fried Grilled Snapper
This recipe can be used on any light flaky fish filet that you want. The important thing to remember with lighter fish is to not over marinate or over season so that the flavor of the seafood comes out.
Brush the filets with extra virgin olive oil and white wine next and then sprinkle the filets generously with Crab Island Seasonings. Grill in a skillet or pan for 5-7 minutes per side or until it reaches an internal temperature of 145 degrees.
Grilled Lemon Pepper Shrimp
Take a pound of peeled and deveined shrimp, rinse and put in a gallon baggie.
In a separate bowl mix extra 2 tblsp extra virgin olive oil, 1/2 cup of white wine, 2 tblsp each of teriyaki and soy sauce.
Put the shrimp in the bag and spring generously with Crab Island Seasonings. Top with Lemon Pepper. Shake up the bag to evenly distribute the marinade and let sit for at least 1 hour. Grill in a saute pan for 5 minutes or until shrimp are pink. Serve over rice.
Seared Cobia Medallions
Cobia is a thicker fish that is served best as a medallion or tenderloin. It is important not to overcook. For seasoning, brush the medallions on both sides with extra virgin olive oil and/or garlic butter depending on your taste preferences. Then coat the fish generously with Crab Island Seasonings on both sides and sear in a pan or on the grill for no more than 5 minutes per side. Turn off and let coast in as the thicker middle finishes cooking.
You may notice all of these recipes are very straightforward and simple. Not a lot of heavy sauces or complicated steps. Just fresh seasonings, fresh fish and the flavors of the Gulf Coast come out every time.
